Traditionally, soup is hot and eaten on a cold winter day or a blustery spring afternoon, but today I am going to talk about something some (including me) might think is unconventional – a cold creamy cucumber soup… did I lose you already? I hope not! This soup is refreshing and easy to make, do yourself a favor and try it out on a hot afternoon, you won’t be sorry!
Kale Cheddar Quiche
One of my favorite weeknight meals is quiche. There are many ways to make a quiche, but this particular recipe is our family’s go-to recipe. The combination of proteins and veggies it will certainly fill you up. This quiche has no crust – crust isn’t a must. We have tried it both ways, with a crust and without, but it is far easier to make without the crust and it also shaves a few unnecessary calories from the nutritional facts.
Basil Mushroom Tomato Sauce
Making tomato sauce at home is not difficult and it is much healthier than the preservative-packed jar or can sauce. I challenge you to try making it at home and taste the difference yourself!
