Instructions
  1. Preheat oven to 350°
  2. Beat sugar, butter & vanilla in large mixing bowl (or in electric mixer bowl) until well combined
  3. Now add the eggs to the butter mixture and mix well (until grainy, but well combined)
  4. Mix in cake flour, baking cocoa, soda, salt, chocolate pudding mix in a separate large bowl
  5. Then add one portion of the flour, then a portion of the buttermilk, and go back and forth until completely combined
  6. Stir in semi-sweet chocolate chips
  7. Grease two 8-inch round cake pans
  8. Equally divide the cake batter between the two cake pans. Using a spatula, ensure that the batter is spread equally within the pan edge-to-edge
  9. Bake in regular, conventional oven at 350° for 15 minutes
  10. Adjust baking temperature down to 325° and continue baking 20-30 minutes more, until an inserted toothpick comes out clean. Start testing after 30 minutes
  11. Remove cakes from pans and place on cooling rack. Allow the cake to cool completely before assembling and icing
  12. Heat water, butter, and vanilla together in saucepan on stovetop until melted then remove from heat
  13. Stir in one cup cocoa, sifted
  14. Stir in powdered sugar, sifted
  15. Stir in heavy cream, up to 4 tablespoons (or 1/4 cup). The consistency of the icing should be very smooth and silky
  16. Place one of the cakes onto a cake plate, then top with cherry pie filling, spread evenly
  17. Place last cake on top of the cherry pie filling
  18. Ice cake by pouring the icing on to the cake, then spread icing over cake top and pour over the sides. Icing will harden as it cools
