Lemon Pound Cake for Trifle – GorillaGrilla

Although this pound cake could pair itself with many desserts or even standalone with some icing (if baked in a cupcake pan), this recipe goes with my All American Trifle. This isn’t a full recipe, it’s simply sized for the Trifle recipe. Enjoy!

Instructions
  1. Pre-heat oven to 300 degrees
  2. Sift the flour, baking powder, and salt in a mixing bowl and set aside/
  3. In a different mixing bowl, cream the softened butter and sugar, you'll want the texture to be light and fluffy.
  4. Beat in egg to butter and sugar.
  5. Mix in the sour cream, vanilla, lemon zest, and lemon juice.
  6. Now combine the flour mixture into the butter and egg mixture. After about 10 seconds of mixing, add the buttermilk. Mix only until the flour disappears, be careful not to over mix.
  7. Spray a square baking pan with non-stick spray, then pour the cake batter into the pan. We are using a square pan here since we have a very small recipe, as we are only making enough for our Trifle.
  8. Bake for 20 to 30 minutes or until a knife inserted in the center of the cake comes out clean.
  9. Remove the cake from the oven and allow to cool for 5 minutes.
  10. Turn the cake over on a cooling rack or platter.
