I love eating chicken with different sauces, this one is fairly basic but has a little depth in taste using Cajun Seasoning. There isn’t enough of the seasoning in this recipe to make the dish spicy, but the sauce will be flavorful and delicious.

This meal also has a decent amount of monounsaturated fat. Remember, eating foods rich in monounsaturated fat can possibly improve blood cholesterol levels (experts say this decreases your risk of heart disease!).

Instructions
  1. Rub chicken with a tablespoon of avocado oil and season with salt and pepper
  2. In a non stick pan, add 1 tablespoon avocado oil and warn on medium heat for about 30 seconds
  3. Spread oil by moving pan around then add chicken
  4. Place chicken in pan and cook until edges are opaque, which should take about 7 mins (could be less depending on thickness)
  5. Flip to the other side, then cover the pan, lower the heat and cook for another 7-10 minutes.
  6. Remove chicken from pan an set aside to rest, cover with tented foil
  7. Returning to the pan, melt butter
  8. Add shallots and cajun seasoning and cook until tender
  9. Add garlic and mushrooms, cook for 2 mins
  10. Add white wine and cook until reduced by half
  11. Add chicken broth and basil
  12. Season with salt and pepper to taste
